Hello!

If you know me you knoooow I do not like cooking :p I hate making a mess.....yes I'm a little OCD :) But I've discovered that kids need to eat, funny how that is! I am always on the lookout for quick simple easy meals using ingredients that I DO have in my pantry. I will admit as time goes by I have gotten into this world a little more and I even like it sometimes....shhhhhhh! please keep my secret! I still have to really really get excited about making something to get past the making a mess part of it...lol. I am that person who if the recipe says "never fail"...IT ALWAYS DOES!!!! I now steer away from those kind of recipes ;) 

Here's a couple recipes my girls and I have tried and they have become all-time family favourites.

Chocolate Peanut Butter Squares

2 c icing sugar
3/4 creamy peanut butter
2/3 c graham cracker crumbs
1/2 c melted butter

Mix together and if you can keep from eating it all up!! press into a square baking pan. We sometimes line in with foil because my family likes them frozen and then you can easily pop the squares out and cut them up.

Topping:

2/3 c chocolate chips
4 t creamy peanut butter
1/2 t butter

Pour this on the top of your squares and if your like my family throw it in the freezer for a bit. These never last long!!!




Hash Brown Casserole

If you don't like sour cream..this is not for you but my kids looove it!

4 c hash browns
1 can cream of chicken
1 pkg cheddar cheese (2 cups)
1/3 chopped onion (opt.)
1/2 c sour cream

Mix all together in a 2 qut. casserole dish and bake away till brownish on top :) You'll know when...I don't have any time written down lol.

  1. Those peanut butter squares sound delicious and I love the hashbrown casserole. We call it cheesy potatoes and it doesn't do a thing for me but it is my go to comfort food. What's better then cheese and potatoes? xoxo

  2. the peanut butter squares are my fav! and i forgot to tell all to melt the topping ingredients together and then pour on top! :)
